Good to know

How many wheels are in a jar?

About 25 per 30g jar, roughly a month of Friday-night drinks.

Is there anything added?

No. Just New Zealand citrus, sliced and dried slowly. No sugar, no preservatives, no sulphur.

How long do they keep?

About 12 months sealed. Once opened, keep the lid on and they stay good for months, they won't go soft like fresh fruit.

How do I use them?

Drop one into a drink, float it on top, or use it as a garnish on a plate. The wheel rehydrates slightly and holds its shape.

How are they made?

We slice whole NZ citrus 3mm thin on a calibrated mandolin and dry it low and slow, about 50°C for 14 hours, so the oils and colour stay in the skin.
