How long does a jar last?
Sealed, about twelve months. Once opened, the wheels stay good for ~3 months if you reseal the jar between uses. Dry, cool, dark cupboard, same as you'd keep good tea.
How many wheels in a jar?
A 30g jar holds roughly 25 wheels. Enough for a month of negronis at home, give or take.
Where do the citrus come from?
New Zealand-grown, from named growers we buy direct from. The regions shift with the season, Gisborne and Bay of Plenty in summer, more imported-from-just-up-the-road in deep winter. We only dry NZ fruit; we don't dehydrate anything we wouldn't slice for our own bar.
Are they organic?
Not certified. We buy from growers we trust, and we don't peel the rind off, so we pick fruit that gets sprayed lightly or not at all. Our long answer is on the story page.
Can I cook with them?
Yes. Drop a wheel into stewing pots, slow-cooked tagines, tea blends, or a poaching liquid. The dehydrated oil concentrates in the rind, so a single wheel goes further than a fresh slice for most uses.
Do you ship outside NZ?
Not yet. We're a one-kitchen operation in our first year, focused on getting NZ right before we look further. Customs paperwork for dried citrus is its own adventure.
